4 cups chicken broth
1 1/2 lbs. fresh broccoli, chopped
1 lg. onion, diced
1/2 cup flour
1 tsp. dry mustard
2 cups milk
1/4 cup butter
2 cups grated cheddar cheese (can use mozarrella as well, I like to do half of each)


Directions:
Directions:
Bring broth to a boil and add broccoli and onion, cook until tender. Melt butter in a sauce pan, stir in flour and mustard. Slowly add mild, cooking and stirring until thickened. Add this mixture to broccoli broth. Add cheese; heat until melted.
