Ingredients:  
1 pkg stove top stuffing prepared as per directions, mix into this one beaten egg and pat into prepared deep pie plate

4 eggs, beaten
1 small onion diced
1 clove garlic
1 small diced red or yellow pepper
1 cup grated cheese (cheddar or Gouda)
1 pkg thawed and drained frozen spinach or 2 handfuls fresh and wilted
2 tomatoes

Directions:
Directions:
saute the onion, peppers and garlic until just tender in a small amount of olive oil
add this on top of the stuffing crust
sprinkle 1/2 the cheese and 1/2 the spinach & repeat
pour egg mixture over top everything

slice tomatoes and place over the pie - sprinkle with salt and pepper

bake 350 30-40 mins
