8 oz. sharp cheddar cheese finely grated
½ c. butter
1 c. flour
½ tsp. Cayenne pepper
1 ½ c. cornflakes (pulverize in food processor)

Cream butter then add cheese and cream again until very smooth. Add flour and pepper and mix thoroughly. Finally stir in cornflakes. Roll small ball in palm of hand and place on cookie sheet. Press with tines of a fork to flatten in to disk about the size of a 50 cent piece.

The real secret of a good cheese straw is to cook slowly for a while until crispy all the way through.

Cook at 320º for about 30 -35 minutes. Take cookie sheet out of the oven after 10 minutes and shake a little salt over the cheese biscuits return to oven for remainder of cooking time.
