BBQ sauce
4 boneless, skinless chicken breasts
2 small unpeeled red potatoes, thinly sliced
1 red or green bell pepper, seeded and sliced
1 green onion, finely chopped
salt & pepper
shredded cheddar cheese

Directions:
Directions:
Preheat oven to 375º. Place a foil sheet, approximately 12x12 inches, on a work surface. Spoon approximately 1 tbsp BBQ sauce in the center of foil sheet. Place one chicken breast (seasoned with salt and pepper) over sauce and spread another spoonful of sauce on top. Top with potato, bell pepper, and onion. Fold foil in half to cover contents. Make narrow folds along edges to seal. Repeat with remaining ingredients. Place packets on baking sheet and bake for 35-45 minutes until done. Open foil packets with scissors and carefully pull back edges (contents will be very hot). Sprinkle cheese on top of each chicken breast and return to oven, unsealed, for 2 minutes or until cheese is melted.
