2 large egg whites
1 tsp cream of tarter

3 C shredded sweetened coconut
2/4 C sweetened condensed milk
1 tsp almond extract
1/8 tsp salt
Bitter sweet chocolate melted with 2-3 T of cream



Directions:

pre-heat oven to 350º
Beat egg whites and cream of tarter until stiff peaks form. Mix coconut, condensed milk, almond extract and salt. Stir in beaten egg whites. With small ice cream scoop mound on cookie sheet lined with sil pat or parchment paper.
Bake for 10 - 15 minutes until lightly golden brown.
Cool completely.

Heat chocolate and cream over double boiler. When melted and combined dip bottom of cooled macaroons into chocolate. Cool on wax paper.
