10 lb. prime rib roast
10 cloves garlic, minced
2 T. olive oil
2 tsp. salt
2 tsp. ground black pepper
2 tsp. dried thyme

Directions:
Directions:
Place roast in pan with fatty side up. In small bowl mix rest of ingred. Spread mixture over the fatty layer of the roast, & let sit out until room temp., up to 1 hr. Preheat oven to 500 deg. Bake roast for 20 min, then reduce temp. to 325 deg. and continue roasting for additional 60 to 75 min. Internal temp should be 145 degrees for med rare. Allow roast to rest 15 min before carving so meat will retain its juices.
