1 lb ricotta cheese
16 oz mashed potatoes
1 egg
a dash ground nutmeg
1 tsp.salt 1/2 tsp black pepper
flour
1 tsp onion powder

Directions:
Directions:
Mix cooled potatoes with ricotta. Add egg and dry ingredients, then, adding one cup of flour at a time, add enough flour to make medium-stiff dough. On a floured cutting board, roll small balls of dough into long ropes, cut into bite size pieces and indent with finger or fork. If dough is sticky, add more flour to individual dough balls before the rope step. Cook gnocchi in salted boiling water about 1 min, or until they float on top of water. Boil them in small batches.

You can use instant mashed potatoes or ready made, for this recipe. Make instant potatoes according to package, you can also make this recipe with just potatoes or just ricotta depending on your preference. I found the best dough was with a mix of both. Serve with red sauce, butter or a butter & sage mix.
