1 tbls. vegetable oil
1/2 cup cooking onions diced
1/4 tsp salt
1/3 c shelled pistachio nuts natural
1 tsp.corriander
1 tsp. cardamom
1 tsp. cinnamon
1/2 bay leaf
1 cup rice
1 3/8 cups chicken broth

Brown pistachios 7-10 minutes in a 275º oven. Allow to cool - then roughly chop. Heat oil, salt and onions in med pan. Using medium heat, saute for 2 minutes. Add spices and bay leaf. Saute until the onion starts turning brown. Add rice and cook until rice is well coated with oil and is slightly translucent - approx. 3 mins. Add chicken broth, cover pot. Bring to a boil. Reducing heat to low and let simmer until liquid is absorbed. Remove bay leaf. Add salt and pepper to taste. Add pistachios to garnish.

This recipe works well with Basmati rice but any rice will do in a pinch. May also use fresh spices like cinnamon sticks, cardamom pods and coriander seeds, but discard those items before serving
