medium zucchini
1 lb. lean ground beef or ground turkey
1/2 cup Italian style breadcrumbs
1/4 c chopped onion
2 eggs
1/4 c fresh parleys
1 garlic cloves minced
spaghetti sauce - ready made or fresh
Directions:
Directions:
Place ground meat in a bowl, add garlic, onions, eggs, parsley, bread crumbs, salt and pepper to taste (optional). Mix all together and set aside. Take your zucchini and slice down the middle, scoop out center of zucchini to make a boat. Save insides for another recipe. Take 2-finger-sized ball of meat mixture and roll into log shape. Place into center of one 1/2 zucchini and repeat with other 1/2. Place in shallow baking dish and add 1/2 in. water, then top off with spaghetti sauce. Bake for 40mins until meat is thoroughly cooked and zucchinis are tender.

I like to vary this recipe, sometimes adding rice under zucchini before baking, You need to add more water to cover rice.
