Use any size roast. Season and let stand at room temperature for one hour
Place roast on a rack in a roasting pan, ribs down and fat side up. Roast in a 375 F oven for one hour. TURN OFF OVEN AND DO NOT OPEN THE OVEN DOOR. Leave in the oven at least two hours or all day. Forty five minutes before serving turn oven on to 375 F and cook 40 minutes for medium rare. Let stand 5 minutes before carving.
