2 cups sugar
1 1/2 cups oil
4 eggs
2 cups flour
2 tsp baking soda
2 tsp cinnamon
1/2 tsp salt
3 cups shredded carrots
1 large can crushed pineapple, well drained
1 cup chopped walnuts
1/4 cup melted butter
8 oz cream cheese
1/2 tsp vanilla
3 cups powdered sugar

Preheat oven to 350F. Mix sugar and oil. Add eggs one at a time, beating after each addition. Add flour, soda, cinnamon and salt. Fold in carrots, pineapple, and walnuts. Pour into greased 9x13in baking pan. Bake for 45-50 minute, or until toothpick comes out clean.
Mix butter, cream cheese, and vanilla. Beat at medium speed until smooth. Slowly add powdered sugar and mix until smooth. Cool cake completely before frosting.
