1 tbsp. olive oil
2 onions, sliced
1 sweet red pepper, chopped
3 cloves garlic, minced
1/2 tsp. fennel seeds
1 lb. hot italian sausage
2 jars tomato/basil pasta sauce
1 tbsp. wine vinegar
12 oz. pkg. rigatoni pasta
2 cups shredded mozzarella cheese
1/4 cup grated parmesan cheese
2 tbsp. parsley

Directions:
In Dutch oven, heat oil over medium heat. Cook onions, stirring occassionally for 5 minutes. Add red peppers, garlic and fennel seeds; cook over medium heat for 10 minutes or until onions are very soft and golden. Transfer to a bowl. Remove casing from sausage, breaking up meat, add to skillet. Cook over medium heat, breaking up with a spoon, for about 8 minutes or until brown. Drain off fat and stir in pasta sauce and vinegar. Return vegetable mixture to pan; simmer over medium heat for 15 minutes. Cook pasta for 8 minutes; drain reserving 1 cup of water. Return pasta to pot, add sauce. Pour everything into a 9x13" pan. Bake at 400ºF for 15 minutes.
