8 medium baking apples
1/2 c. apple or orange juice
1/4 c. firmly packed brown sugar
1/2 tsp. ground cinnamon
1 c. sharp cheddar cheese, grated
1/4 c. raisins
1/4 c. chopped pecans, toasted

Directions:
Directions:
Preheat oven 350º. Remove cores from apples; pierce skins with sharp knife. Place apples in shalllow baking dish. Combine juice, sugar and cinnamon; pour over apples. Bake apples 30 to 35 minutes, basting occasionally with juice mixture. Remove apples from oven, combine cheese, raisins and pecans. Spoon into centers of apples. Let stand for 1 minute.
