1 package shredded pepper jack cheese
1/2 log velveta
1 large yellow onion
1 red pepper
1 green pepper
various hot peppers (to taste....japs, habaneros, etc.)
4 c. frozen corn
1 bunch green onions
1 can hot rotel
2 tsp. chopped garlic
Spice as you like (cracked pepper, chili powder, cumin)

Finely chop all veggies.

Saute all veggies with garlic in a bit of olive oil until they get tender

Cut velveta into small cubes

Mix all ingredients in a large glass casserole dish

Bake at 400 until everything is bubbling

Eat with corn or flour tortilla chips
