5–6 yellow squash
1 slice Fatback
Salt and pepper to taste

Directions:
Directions:
Cut squash into ½ inch slices, place in iron skillet, add salt, pepper, fatback and cover with water. Cover with lid and cook on medium heat, chopping squash as it cooks. Cook and keep chopping squash until it reaches an almost mashed consistency. Remove fatback. Cook water almost totally out of squash. Taste for salt and pepper. Best serve with cornbread.
