1 lg eggplant
2 med. zucchinis
1 can crushed tomatoes
1 lg. onion
5 cloves of chopped fresh garlic
2 tsp. sugar
Salt to taste

Directions:
Directions:
Saute onions and garlic in oil. Add cubed, peeled zucchini and eggplant. Saute about 8 mins. and then add crushed tomoatoes.
Cook about 20 mins. until veggies are tender and sauce is cooked. Add sugar, fresh basil, grated cheese and salt to mixture. Cook another 5 minutes. Add parsely. Eat plain or over pasta.
