use ground chicken or lean ground beef
2 slices of bread soaked in warm water and squeezed out
pinch of red pepper flakes
2 TB olive oil
1 egg yolk
1/2 grated onion
chopped garlic (1 clove)
TB Dijon mustard
splash Worcestershire sauce
1TB rosemary
Tsp Oregano
4TB basil (fresh)
cumin, pepper, salt

mix all ingredients together in a big bowl and gently mix it with your hands
roll into balls
saute in a large pan turning once over med heat
