pork tenderloin - thinly sliced on an angle
3TB apricot jelly (of other favorite)
2TB honey
1Tb soy sauce
1/2 tsp oil
1tsp ginger fresh is good -( powdered ok too)
1 garlic clove
chili pepper flakes
salt
1 red pepper cut into strips/ green onion cut on diagonal (optional)

Directions:
Directions:
combine jelly, honey, soy sauce, oil and garlic clove (pressed), ginger and chili flakes in a shallow bowl.

Cut the tenderloin into thin but angled slices and add to marinade for 15 minutes

Add a small amount of oil to pan and saute the meat, flip then add 1 red pepper sliced and some green onion sliced on the diagonal, cook a few more minutes add a tsp or 2 of the remaining marinade if too dry.
