2 cups cooked yellow squash, drained
1 cup saltines crushed
1 small onion diced
1 cup grated sharp cheese
2 eggs
1 cup milk
3 T. melted butter/margarine
Salt & Pepper to taste
½ cup Ritz cracker crumbs.

Directions:
Directions:
Mix squash, saltines, onion and cheese. Beat eggs until blended, add milk, butter, salt and pepper. Mix with squash mixture. Pour in casserole dish. Sprinkle a thin layer of cheese on top. Sprinkle Ritz crackers crumbs over cheese. Bake 350 degrees for 30 minutes
