3 garlic cloves
1 small jalapeño
1 lemon/lime, juiced
1 Tbsp. apple cider vinegar
½ tsp. unrefined sea salt
opt: 1 Tbsp. honey
28 oz can tomatoes juice
2 fresh tomatoes
¼ - ½ sweet onion
opt. Bell pepper, chopped
1 bunch cilantro

Directions:
Directions:
Finely chop garlic and jalapeño in food processor. Add lemon/lime juice, vinegar, salt and honey, process again. Add tomatoes, onions, and green pepper, chop to desired chunkiness. Add ¼ -½ cup chopped cilantro to completed mixture. Serve in a bowl.
Variations: Prepare entirely with canned tomatoes or replace sweet/red onion with 2-3 shallots.
Tropical Variation: Add ½ cup of chopped pineapple.
If planning to serve at a later time, Save some fresh cilantro to add just before serving.
