1 chicken, cut up
flour, salt, pepper
1 c long grain rice
1 pkg dry onion soup mix
3 c water
1 can cream of mushroom soup
1/3 c water

Directions:
Directions:
Spray baking pan with cooking spray or line with foil. Mix rice, onion soup and water and spread evenly on bottom of pan. Put about 1/2 c flour in ziplock bag, add salt and pepper, add chicken pieces, one at a time until coated and then arrange on top of onion soup mixture, Mix 1/3 c water with mushroom soup and heat until smooth, pour over chicken. Bake uncovered 350º about one hour or until juices run clear.

Got this recipe years ago from the Nuns at St. Mary's. It quickly became a family favorite. Also freezes well.
