10 Slices of bacon - drippings reserved
1/2 c. flour
1 Onion - diced
3 cloves Garlic - diced
1 can Stewed Tomatoes
2 T. Tomato Paste
1/2 c. Milk
1/2 can Beef Stock
Salt and Pepper to taste

Directions:
Directions:
Cook bacon and place strips aside. Make a dark roux with the bacon grease and flour. This can take anywhere from 20-30 minutes. Add onions and garlic to roux and cook until translucent. Add stewed tomatoes, salt and pepper. Cook for 10 minutes and add in milk and beef stock and tomato paste. Simmer until the gravy thickens.

Serve over buttermilk biscuits with bacon.
