4 Hot Italian sausages
1/2 pound of pepperoni sausage
2 bell peppers ( any color)
1 large onion
1 cup of sliced mushrooms
2 cloves of fresh garlic
4 stalks of celery
1 cup of spinach ( fresh or frozen )
1 Jalapeņo pepper
11/2 cups of crushed tomatoes
1 can of tomato sauce
1 can of tomato paste
1 cup of elbow macaroni
1 cup shredded mozzarella cheese
2 cups water
2 tbsp of olive oil
1 small jar of olives (I buy the pieces)

In a large saucepan, add olive oil and the chopped sausage. In a effort to keep this healthy I cook the Italian sausage in the microwaves oven so most of the fat cooks out. Add all the chopped vegetables and the tomato products, also add 2 cups of water.
Bring to a boil for 30 minutes , reduce heat and simmer for 90 minutes. During the last 15 minutes of cooking add the cup of elbow macaroni. Top with
mozzarella and serve.
