Cream of Mushroom Soup Recipe

4 TBSP butter
2 tsp chopped onion
1 lb fresh mushrooms
1 quart chicken stock
2 TBSP flour
1 tsp salt
1 cup half and half
2 TBSP dry sherry

-- Melt 2 TBSP butter in skillet.
-- Add onion and saute until soft.
-- Add mushrooms, chopped fine and saute for 2 minutes
-- Add chicken stock, cover and let simmer for 15 minutes.

-- Melt remaining 2 TBSP of butter in side skillet.
-- Add flour and salt, and cook until bubbly.
-- Add mushroom mixture and cream.
-- Add sherry.

Reheat and serve with a dash of unsweetened whipped cream on top.
