6 chicken cutlets
1/3 c grated Parmesan cheese
1/2 c oil
1 1/2 c flavored bread crumbs
2 eggs, well beaten
1 tsp. salt
1/4 tsp. pepper
6 slices Mozzarella cheese

Directions:
Directions:
Beat eggs with salt and pepper. Dip each cutlet in egg mixture and then in bread crumbs. Cook each breaded cutlet in hot oil until brown on each side.
Pour about 1 cup of marinara sauce in the bottom of baking dish large enough to hold the six cutlets in a single layer. Pour about 2 cups of marinara sauce over all the cutlets and sprinkle with Parmesan cheese. Top each cutlet with one slice of mozzarella cheese.
Bake at 350º for 20 minutes or until cheese melts.
