2 hot house seedless cucumbers, peeled
3 red bell peppers, seeded
8 plum tomatoes, peeled and seeded
1 lg. Vidalia onion
3 lg. garlic cloves
1 46-oz. can tomato juice
1/2 c. vinegar
1/2 c. olive oil
1 T. kosher salt
2 tsp. hot sauce

Directions:
Directions:
Use a food processor to chop cucumbers, peppers, tomatoes, onion and garlic. Process each vegetable individually resulting in a fine, chunky consistency but not too mushy. Combine with tomato juice, vinegar, olive oil, salt and hot sauce. Refrigerate overnight. Serve with a dollop of sour cream.
