1 1/4 c. sugar
1 tsp. dry mustard
1 tsp. salt
1 small onion
1 3/4 c. salad oil
1/2 c. vinegar
1 lb. fresh spinach
8 green onions
4 hard boiled eggs
crumbled bacon to taste

Directions:
Directions:
Mix together sugar, mustard, salt, onion, oil & vinegar in a blender. Chill/refrigerate until serving.
Rinse spinach and tear into bite sized pieces. Chop eggs and green onion. Close to serving time, add along with bacon to spinach. Put chilled dressing over salad at serving time.
