2 lbs of thickly sliced pork shoulder
fresh ginger,1 garlic clove crushed, 1 stalk of lemon grass cut into 2 inch pieces.
1/2 c brown sugar
3 tbsp of vinegar, 2 tbsp fish sauce, 1 tbsp salt, soy sauce to taste.
8 hard boiled, shelled eggs

In a little oil saute ginger,garlic, lemon grass, set aside. In a heavy pan melt the brown sugar, be careful not to burn add ginger mix. Add 5 T or more of hot water, add pork simmer for 15 minutes.
Add vinegar, fish sauce, salt and soy sauce. and boiled eggs. Cover and cook 1 hour on low heat. Serve with rice. Spoon spicy liquid over rice.
