1 1/2 CUPS CORNBREAD MIX

1/2 TSP. SALT

2 EGGS

1 CAN CREAM CORN(14. 3/4OZ)

1 CUP(8OZ) SOUR CREAM

1/4 CUP CANOLA OIL

1-1/2 CUP SHREDDED CHEESE(DIVIDED)

2 JALAPEŅO PEPPERS SEEDED AND FINELY CHOPPED

1 POUND LEAN HAMBURGER MEAT

IN A LARGE BOWL, COMBINE THE CORNBREAD MIX AND SALT.IN ANOTHER BOWL WHISK THE EGGS,CORN, SOUR CREAM AND OIL. STIR INTO DRY INGREDIENTS JUST UNTIL MOISTENED. FOLD INTO COOKED(DRAINED) HAMBURGER, THEN FOLD IN 1 CUP OF CHEESE AND PEPPERS.

TRANSFER INTO A GREASED SQUARE BAKING PAN.(I SOMETIMES USE MY LG. BLACK SKILLET)SPRINKLE REMAINING CHEESE ON TOP. BAKE AT 350* FOR 35-45 MIN(DEPENDING ON YOUR OVEN)OR UNTIL INSERTED TOOTHPICK IN CENTER COMES OUT CLEAN. SERVE WARM..............
