3 lbs potatoes
5 tbs olive oil
3 tbs butter
2 onions sliced
4 garlic cloves, crushed
salt and pepper
chopped fresh parsley, to garnish

Directions:
Directions:
Slice potatoes 1/4 inch thick and put in a large pan of lightly salted water. Bring to a boil. Cover and simmer gently for about 10 minutes. Avoid boiling too rapidly or potatoes will break up. When just tender, drain well.

While potatoes are cooking, heat oil and butter in a very large skillet. Add the onions and garlic and cook over medium heat, stirring frequently until the onions are soft.

Add cooked potatoes to the onions and garlic, carefully stirring occasionally, for about 5-8 minutes until potatoes are well browned.

Season to taste with salt and pepper. Sprinkle over chopped parsley to serve. If desired, transfer to a large ovenproof dish and keep warm in a low oven until ready to serve.
