Pancakes:
2 c. flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
3 T. sugar
2 large eggs, slightly beaten
3 c. buttermilk
4 T. unsalted butter, melted
1/2 tsp. butter for griddle

Syrup:
1 cube butter
3/4 c. buttermilk
1 1/2 c. sugar
2 T. corn syrup
1 t. baking soda
1 t. vanilla

Pancakes:
Heat the griddle to 375º. Mix together all dry pancake ingredients then add the wet ingredients. The batter will have small to medium lumps. Cook until bubbles from on top and are slightly dry on the side. Flip and cook until the bottom is golden.

Syrup:
Melt the butter in a very large pot. Add all ingredients and bring to a boil on medium heat. Stir constantly and boil for 7-9 minutes or until golden in color. Beware, it will expand to five or six times its size as you boil it.
