1 cup packed brown sugar
1/2 cup butter
2 Tablespoons light corn syrup
6-8 sliced fresh peaches + more for garnish
3 eggs
1 cup milk
1 teaspoon vanilla
9 slices French bread 3/4" thick
1 cup whipping cream
1/2 teaspoon vanilla
2 Tablespoons sugar

in a small sauce pan, cook brown sugar, butter, and corn syrup until thick about 5-7 minutes. Pour into 13x9"pan. Arrange a peaches on top. In a mixing bowl beat eggs milk and vanilla. Soak bread slices in egg mixture for 1 minute, place over peaches. Cover and refrigerate overnight. Remove from refrigerator 30 minutes before baking. Bake uncovered at 350 degrees for 35-40 minutes. Whip cream, add sugar and vanilla. Top each piece of casserole with whipped cream. Garnish with more sliced peaches and a mint leaf.
