1 lb. sliced carrots
¾ cup mayo
4 tbsp. grated onion
4 tbsp. horseradish*
1 tsp. salt
½ tsp. pepper
1/3 cup liquid from carrots
½ cup buttered cracker crumbs - crushed

Directions:
Directions:
Simmer carrots until they are soft. Don’t forget to reserve juice from carrots for later. Mix carrots with remaining ingredients and place in baking dish. Sprinkle crumbs on top. Bake for 15 – 20 minutes in 375 degree oven.
*Adjust amount of horseradish according to taste.
