1/2 (15 oz) package refrigerated pie crust
1 stick softened butter
1 1/2 cups sugar
4 large eggs
2 tbsp. flour
1/4 tsp. salt
1 cup shredded coconut
1 cup buttermilk
1 tsp. vanilla
sweetened whipped cream and strawberries for garnish

Directions:
Preheat oven to 350. Fit pie-crust into a 9 inch pie plate; fold edges under and crimp, set aside. Beat butter and sugar until creamy; add eggs, beating well. Add flour and salt, beating at low speed until blended. Stir in coconut, buttermilk and vanilla. Pour into pie shell; bake 1 hour or until knife comes out clean. Cover loosely with foil while baking to prevent excess browning if necessary. Garnish with whipped cream and strawberries, if desired.
