4 chicken breasts - or whole chicken. Cooked, skinned and cubed, or torn into bite size pieces - can be boiled, grilled or baked.
Italian Salami, sliced, cut each slice into 4 wedges
1 lb package Rotini pasta (tri-colored)
Brianna's Caesar dressing - or whatever kind you prefer, if you can't find Bri's.
Ranch dressing
1/2 to 1 cup broccoli florets
1/2 cup sliced black olives
1/2 cup thinly sliced baby carrots (if desired)
Freshly grated Asiago cheese
Romaine lettuce leaves

Directions:
Cook pasta according to package directions (I usually add chicken broth and some onion powder to the cooking water). Pasta should be al'dente, not mushy. Rinse pasta under cold water.. until cool.. drain well. Put all chicken and veggies in large bowl.. toss. Add about 1/4 cup Asiago, 1/2 cup Caesar dressing and 1/2 cup Ranch dressing.. and mix well. Mix in Pasta.. Add more dressing(s), if necessary and more Asiago. Chill at least 2 hours. Before serving, you may need to add more Caesar dressing - it's really a matter of preference. Serve on romaine leaves.. top each serving with some freshly grated Asiago. I also like adding some fresh cracked pepper. If you aren't familiar with Asiago, you can use Parmesan. I just prefer the Asiago.
