1 can (@151/2 oz.) Alaska Red Sockeye Salmon,
3/4 sleeve Saltines Crackers (crushed),
2 eggs,
1/2 large Onion (diced),
1/2 c. white Cornmeal,
Vegetable Cooking Oil

Directions:
Directions:
Drain salmon and remove skin and bones. In a large mixing bowl combine salmon, crushed saltines, diced onion and eggs. Mix well and form into 1 1/2" balls and slightly flatten to form patties. Pour cornmeal in a plate and coat patties on both sides. Drop patties into hot vegetable oil and fry until light brown on outside turning occasionally.
