1 c. chunky tomato salsa
1/4 c. orange juice
2 t. dried oregano
1/4 t. ground cinnamon
1/4 t. ground cumin
1 t. extra-virgin olive oil
1 onion, sliced and separated into rings
1 jalapeņo or chipotle pepper, minced
4 thick center-cut pork chops (or shoulder steaks, visible fat removed - about 1 lb.)
Salt and freshly ground black pepper

1. Combine the salsa and orange juice. Stir in the oregano, cinnamon and cumin and set aside.

2. Season pork on both sides with salt and pepper. Heat the olive oil in the pressure cooker over high heat and sear the pork chops quickly until nicely browned on both sides. Add the salsa sauce and scatter the onion rings and minced chilies over top.

3. Lock the lid in place and bring the cooker up to full pressure over high heat. Reduce heat to medium-low just to maintain pressure, and cook for 15 minutes. Reduce pressure quickly, remove the lid and continue to simmer for 5 to 10 minutes or until sauce thickens.

Slightly sweet and spicy, this is a modern version of a traditional dish. You can puree the salsa with the orange juice in a blender food processor for a smoother sauce, if desired. Serve with refried beans and rice.
