2 8oz packages of cream cheese
2 eggs
2 tsp of vanilla
1/2 c sugar
16 vanilla wafers or pecan sandies
1 can pie filling cherry or,blueberry, whatever your preference

Directions:
Directions:
Line cupcake pans with cupcake papers. Put one cookie in each paper. Beat cream cheese, eggs, vanilla and sugar until creamy.Spoon mixture on top of each cookie to a little past 1/2 full.
Bake at 375º for about 12-15 minutes. Cool cheesecakes, spoon pie filling on each cupcake. Refrigerate until chilled.

The cupcakes will collapse a bit when cooled, so don't be alarmed when they sink a bit, it's supposed to happen
