Salad:
1 large head romaine lettuce
4 oz. shredded Swiss cheese
1 cup pecans
1/4 cup craisins
1 apple and 1 pear, cubed
may do ahead and sprinkle with lemon juice
If adding chicken- about 1/2 boneless cooled chicken breast  per person, cubed




Dressing:
1/2 cup sugar
1/3 cup lemon juice
1 T. Dijon mustard
1/2 teaspoon salt
2/3 cup canola oil
1-2 teaspoons poppy seeds (optional)

Directions:

Serves: 6-8

Salad:
Chop the romaine lettuce. Chop the pecans. Cube the apple and pear. Sprinkle all and the craisins over the lettuce. Beat dressing and pour over salad just before serving. Toss gently.
