1 1/4 cup oat bran
1 1/4 cup all-purpose flour
3 tsp baking powder
1/2 cup brown sugar
1/2 tsp salt
1 tsp cinnamon
2 tsp nonfat dry milk
1/4 cup chopped walnuts
3/4 cup skim milk
1 tbsp lemon juice
3 egg whites beaten with 2 tsp corn oil
1/4 cup corn oil
1/4 cup raisins
2 cups chopped apples

Directions:

Grease or paper line muffin pan for 12 muffins. In a large bowl, combine the oat bran, flour, baking powder, brown sugar, salt, cinnamon, dry milk, and walnuts and mix well. In a medium bowl, combine the skim milk, lemon juice, egg whites, corn oil, raisins, and chopped apples and mix well. Combine the two mixes and stir only to moisten. The batter should look lumpy. Spoon the batter into the muffin cups and bake for 20-25 minutes at 400º. Remove from pan and cool on rack.
