2 c. flour
1 c. sugar
1-1/2 t. baking powder
1/2 t. soda
1 t. salt
1/4 c. shortening
3/4 c. orange juice
1 T. grated orange rind (optional)
1 egg, well beaten
1/2 c. chopped nuts
1 c. cranberries-coarsely chopped

Directions:
Directions:
Sift together flour, sugar, baking powder, soda and salt. Cut in shortening until mixture resembles the texture of coarse cornmeal. Combine orange juice and grated orange rind with a well beaten egg. Pour all into dry ingredients, mixing enough to dampen. Fold in chopped nuts and cranberries.
Spoon into greased loaf pan. Spread corners and sides slightly higher than center. Bake at 350º for 1 hour; until crust is golden brown. Remove from pan and cool.
