4 servings of instant potatoes
1 8oz sour cream
2 tbs dried minced onions
1/2 stick butter melted
1 bag of shredded cheese
salt and pepper to taste

Directions:
mix potatoes according to package directions (make a little dry, don't add too much liquid)
add sour cream, minced onions, butter and salt and pepper, mix well. add a handful of cheese, mix and pour into baking dish. top with cheese and bake until cheese is melted and bubbly.

My friend's Kelley and Jessica and I used to make this at least once a week when we lived in Jackson, TN. Goes great with burger beans.
