1 full loaf of french bread (day old is best)
.5 cup heavy whipping cream
1.5 cups whole milk
1.5 cups water
4 oz. melted butter
11 oz. white chocolate chips
3 cups unrefined cane sugar
3 T. pure vanilla
2 T. cinnamon
2 tsp. nutmeg
5 eggs breaten slightly

sauce ---
1 lb unsalted butter
1 lb light brown cane sugar
.5 cup good bourbon
zest and juice of one large orange or two small ones

tear bread into chunks, then mix all ingredients in a large bowl until fully incorporated and bread is falling apart. pour into a large WELL SPRAYED pyrex or my preference, a half size disposable foil baking pan. let this rest while you turn the oven on to preheat to 375. once oven is ready, place dish in center of oven and set a 25 minute timer. once timer goes off, rotate pan 180 º. set timer again for 20 minutes. Depending on your oven , your bread pudding could be close to done at this point, or you could need additional cooking time. Dish is ready when you lightly shake the pan, the sides of the bread pudding will start to come away from the pan, and the center is set. let this rest on a cooling rack or trivet for at least twenty minutes before cutting.

sauce.

in a good sauce pot, melt butter over medium heat, then add sugar. stir this for a few minutes and the sugar and butter will start to incorporate. once fully blended, remove pot from heat(very important) and add bourbon ,zest and juice. replace on med heat and simmer for two minutes while stirring. pour over entire surface of bread pudding and enjoy.
