Grilled Redfish Recipe

2 redfish fillets, skin on
Salt
Lemon pepper
Minced garlic
Dried basil
Butter
Parmesan cheese

Directions:
Directions:
Slit sides in fish fillets and sprinkle nonskin side with salt, lemon pepper, garlic and basil.
Place fish skin up on medium grill and baste with melted butter several times during grilling.
(Large fillets take about 30 minutes)
When fish separates easily from skin it is done.
When done, remove from grill, discard skin and baste again with butter and Parmesan cheese. Return to grill for a about 2 minutes to heat cheese.
