1 Cup Guidry's seasoning mix
1 Can Original Rotel
Slap ya Mama seasoning
1/2 Stick of butter
1/3 Cup Heavy Whipping Cream
1 Small Block Mozzerella Cheese
1 Small Block Velveeta Cheese
Tortilla Chips
3 lbs of Peeled and Cleaned Shrimp

In a medium size pot, carmelize guidry's mix and butter over medium heat. Do not brown onions and peppers, just cook until onions are clear. Add heavy whipping cream and 1 small can of Rotel and heat until sauce is hot. Add shrimp and seasoning to taste and cook about 3 minutes or until shrimp is mostly cooked. Reduce fire to med/low and add cheese in small amouts until cheese sauce is thick. Note: it may not take the amount of cheese listed in ingredients. I simply start adding small chunks of mozerrella and velveeta in equal amounts until the sauce is the right thickness. Reduce heat to low and keep warm until ready to serve.

I often came back from fishing trips with leftover bait shrimp that were just too pretty to freeze for another trip. Most often this happened in the fall when chasing birds and there was no need for bait shrimp. I came up with this after a fishing trip and was preparing food for an evening LSU football game.

This sauce can be poured over Nacho chips or served as a dipping sauce for chips. It also works great as a fettucini sauce. Just boil your favorite type of pasta and drain, then add shrimp sauce. The shrimp can also be substituted for crawfish tails or crabmeat. Enjoy!!!
