1 cup flour
1 1/2 tsp baking powder
1/4 tsp salt
1 tbsp shortening
1/3 cup warm water
Oil for frying
Powdered sugar or honey, optional

Directions:
Directions:
In bowl, combine flour, baking powder and salt. Cut in shortening until mixture resembles fine crumbs. Gradually add water, stirring with a fork. Dough will be crumbly. On lightly floured surface, knead dough for 3 minutes until smooth. Let rest 10 minutes. Roll out into rectangle. Cut into 12 squares. In deep fat fryer, heat oil to 375 º. Fry sopaipillas for 1-2 min per side. Drain on paper towel. Serve warm with honey or dust with powdered sugar, if desired. Makes 6-8 servings.
