2 Tbsp Parsley
1 Egg
1 pkg Frozen Spinach
1 Cup Mozzarella
1/2 Cup Ricotta
1 tsp Salt
1/2 tsp Pepper
1/4 Cup Parmesan
1/2 Cup Finely Chopped Onion
1/2 lb Butter and 2 Tbsp Butter
1 pkg Phyllo Dough

Directions:
Directions:
Melt 2 Tbsp Butter, add Onion and saute until golden. Add drained Spinach, cook until moisture evaporates. Remove from heat.

Beat Eggs, Cheeses, Parsley, Salt and Pepper. Stir into Spinach mixture.

Brush one sheet of dough lightly with Butter, another on top and brush with butter. Cut crosswise into 7 strips. Place 1 tsp of filling at bottom and fold flag style. Brush with Butter. Repeat until all ingredients are used.
Place on Baking Sheet. Bake 20 minutes at 350 until golden brown. May be refrigerated overnight and covered or frozen for baking later.

Note: Makes approximately 120 triangles.
