Homemade Cinnamon Rolls Recipe

6 tbsp. shortening
1 c. sugar
2 tsp. salt
2 c. milk
2 packages of yeast
5-6 c. all-purpose flour
2 eggs

Cinnamon Filling
2 sticks of room temperature butter
1 1/2 c. of sugar
1/2 c. brown sugar
4 tsp. cinnamon

In a large bowl ad shortening, salt and sugar. Heat 2 c. of milk to boiling and add that to the bowl also. In two separate small bowls add 1/4 c. hot water and 1 tsp of sugar. Sprinkle the yeast over the top of the water and stir. Add one cup of flour to the milk mixture and stir; this gives the yeast something to bind to. After the yeast is done rising (it should triple in size) add it to the milk mixture and stir. Beat two eggs and add them to the milk mixture. Add flour until a dough ball forms. Sprinkle the counter top with flour and put the dough on it. Let the dough rest for about 10 minutes. Knead the dough for 3 or 4 minutes. Grease the large bowl and place the dough in it. Cover it with a towel and set it in a WARM area. Let it double in size (this takes about an hour to an hour and a half). Punch it down and let it rise again. Then put the dough on a floured countertop. Roll it into the shape of a rectangle. Now it's time to make the filling.
Cinnamon Filling:
Mix together all the ingredients in a bowl. Spread the filling on the dough and cut dough in half vertically down the center. Roll the dough from the outside in and cut the two rolls in 1-1 1/2 inch slices. Place the rolls in a greased baking pan and allow to rise for 30 minutes. Bake in a 350º oven for 35-45 minutes until golden brown. Frost with Buttercream Frosting if desired.
