Fettuccine pasta
1 or 2 chicken breasts - sliced thin, then 1-2 inch bites
1 1/2 - 2 tbsp. olive oil
1/4 c. butter
1/4 c. minced onion
1 clove garlic minced
pinch nutmeg
1 c. half and half or heavy cream
1 c. Parmesan cheese
1 egg yolk whisked
1/4 c. fresh parsley

Salt and pepper chicken. In a skillet, cook chicken in olive oil on medium heat till no longer pink. Be careful not to over cook. Cook fettuccine according to directions on box. Add butter to skillet. Toss in onions and cook until you smell the onion release its flavor. Turn down the heat if it starts to boil. Add garlic till you smell it cooking. Add pinch of nutmeg. Add 1 cup of half and half. Simmer milk for 4-5 minutes, stirring with a wooden spoon. Add Parmesan cheese. Add chicken to mixture and heat through. Turn off stove and drizzle egg yolk in skillet while stirring quickly. Add parsley. Add drained parsley and toss gently.
