1/2 small jalapeņo chile
1/4 small red onion, peeled and root end removed
1 small garlic clove, minced or pressed
2 tablespoons fresh cilantro leaves
1/4 teaspoon salt
pinch ground pepper
2 teaspoons lime juice
1 14 ounce can diced tomatoes, drained

Pulse all ingredients in food processor except tomatoes until minced. About 5 1-second pulses. Add tomatoes and pulse until roughly chopped about 2 1-second pulses.

If you want a medium hot flavor, use a whole jalapeno. If you want it extra hot, use two jalapenos. Teresa always doubled this recipe. Ginger uses a can of whole tomatoes instead of diced!
